3 green onions, diced
1/2 walnuts, toasted
1/4 cup old fashioned oats
2 cups cooked lentils
1 cup cooked farro or bulgur
1/2 cup mashed sweet potato
Salt & pepper
Optional: garlic powder, Lawry’s, Frank’s
- Sauté the green onions until caramelized, 1-2 minutes.
- In a food processor, pulse the oats and the walnuts for 20 seconds. Add 1 cup of the lentils and process for another 20 seconds. Remove from the food processor and place in a large bowl.
- Add the remaining lentils, bulgur or farro, green onions, sweet potato and any seasonings you’re using. Mix well.
- Form into 6 patties and place on a heated skillet coated with nonstick spay. Cook until browned, about 3-4 minutes per side. Serve on a whole grain bun, if desired.
These burgers freeze well for a quick heat and eat meal.
