Thai Chicken Pizza

12” whole wheat pizza dough

1 large chicken breast

1/3 cup fish sauce

Juice of 1 lime

1/4 cup brown sugar

1 tsp Thai chili garlic paste

1/2 cup Thai spicy peanut sauce

3 green onions, chopped

1/2 cup 2% mozzarella cheese, shredded

1/4 cup cilantro, chopped

  1. Cut chicken into chunks and place in a glass bowl. Add the fish sauce, lime juice, brown sugar and chili garlic paste. Mix well and refrigerate, covered, for at least 30 minutes or overnight.
  2. Remove chicken from the bowl and add about half the marinade to a sauce pan. Cook until the chicken is no longer pink inside and most of the marinade has reduced. Cool and chop the chicken into bite-sized pieces.
  3. Place the chicken on the pizza crust and top with Thai peanut sauce, green onions and cheese. Bake the pizza for 10-15 minutes in a 400 degree oven or until the crust is golden brown and the cheese is bubbly. Remove from the oven, top with fresh chopped cilantro and serve.
