12” whole wheat pizza dough
1 large chicken breast
1/3 cup fish sauce
Juice of 1 lime
1/4 cup brown sugar
1 tsp Thai chili garlic paste
1/2 cup Thai spicy peanut sauce
3 green onions, chopped
1/2 cup 2% mozzarella cheese, shredded
1/4 cup cilantro, chopped
- Cut chicken into chunks and place in a glass bowl. Add the fish sauce, lime juice, brown sugar and chili garlic paste. Mix well and refrigerate, covered, for at least 30 minutes or overnight.
- Remove chicken from the bowl and add about half the marinade to a sauce pan. Cook until the chicken is no longer pink inside and most of the marinade has reduced. Cool and chop the chicken into bite-sized pieces.
- Place the chicken on the pizza crust and top with Thai peanut sauce, green onions and cheese. Bake the pizza for 10-15 minutes in a 400 degree oven or until the crust is golden brown and the cheese is bubbly. Remove from the oven, top with fresh chopped cilantro and serve.
