Pumpkin Waffles

1/4 cup pumpkin puree
2 Tbsp brown sugar
2 eggs
2 Tbsp melted butter
1.5 cups milk
3/4 cup all purpose flour
3/4 cup whole wheat flour
3 tsp baking powder
1 tsp cinnamon
1 cup quick cook oats

  1. In a medium bowl, combine the first five ingredients.
  2. In a large bowl, combine the last five ingredients.
  3. Add the wet ingredients to the dry ingredients and stir to combine.
  4. Pour batter into a preheated waffle iron and follow manufacturer’s directions until done.

Top waffles with Greek yogurt, fruit and/or nuts for a balanced meal.
