Cut correctly to avoid juice stains. Divide into quarters with a sharp knife. Fill a medium bowl with cool water and submerge the quarters in the bowl. Run your fingers over the seeds to dislodge them, the bitter pith will float and the seeds will sink. Remove the pith, drain the bowl, pat the seeds dry and enjoy!
Drop seeds (Arils) into drinks and cocktails.
Toss into cottage cheese, fresh salads, yogurt, fruit salsa or low fat ice cream.
Eat by the handful as a snack.
