Penne with Spinach Sauce

1 lb. whole wheat penne
3 garlic cloves
2 oz goat cheese
1 oz reduced-fat cream cheese
1/4 tsp salt
1/2 tsp ground black pepper
6 oz baby spinach leaves
2 Tbsp grated parmesan cheese

Cook pasta. Drain, reserving 1 cup of cooking liquid. Meanwhile, mince garlic in food processor. Add goat cheese, cream cheese, salt, pepper and half of the spinach leaves. Blend until smooth and creamy. Place remaining spinach leaves in a large bowl. Add drained pasta, then scrape the cheese mixture over the pasta and toss to coat, adding enough of the reserved cooking liquid to moisten. Season with salt and pepper to taste. Sprinkle with parmesan cheese.
