Peanutty Energy Bars

½ cup salted dry-roasted peanutse61a9199362f81ae24e3d22239a4c90e
½ cup roasted sunflower seeds or other nut
½ cup raisins or other dried fruit
2 cups uncooked oatmeal, old fashioned or instant
2 cups toasted rice cereal, such as Rice Krispies
½ cup peanut butter
½ cup packed brown sugar
½ cup light corn syrup
1 tsp vanilla

  1. In large bowl, mix peanuts, sunflower seeds, raisins, oatmeal and toasted rice cereal. Set aside.
  2. In medium microwaveable bowl, combine peanut butter, brown sugar and corn syrup. Microwave on high for 2 minutes. Add vanilla and stir until blended.
  3. Pour peanut butter mixture over dry ingredients and stir until coated. Spoon into 9”x13” pan. Press down firmly (coat hands with cooking spray or oil). Let stand for 1 hour, cut into 16 bars.
