3 medium red potatoes
1/4 cup olive oil
1 tsp or less salt
Optional seasoning ideas: salt-free blends, curry powder, chili powder, garlic powder
Layer 3 paper towels on a microwave safe plate, set aside. Scrub potatoes and cut into 1/8″ thick slices. Brush each side with olive oil and lightly sprinkle with salt and seasonings. Arrange in a single layer on prepared plate. Microwave on high for 3 minutes. Flip and microwave another 3-4 minutes or until chips begin to brown and turn crispy and brittle. Repeat with remaining potatoes. Allow to cool completely. Store cooled chips in airtight container.
