Maple Apple Pork Medallions


  • 1 lb pork tenderloin
  • 1/3 cup maple syrup
  • 1/3 cup apple juice
  • 2 Tbsp Dijon mustard
  • 2 Tbsp ketchup


  1. Cut pork into 12 slices and flatten each to about 3/4” thickness. Set aside.
  2. In a small bowl, combine the remaining ingredients.
  3. Spray a skillet with non-stick spray and place over medium heat. Add 6 pork slices and cook for 2 minutes on each side. Remove from skillet and keep warm. Repeat with remaining pork slices. Add syrup mixture to skillet and cook about 5 minutes, until bubbly and reduced. Add the pork and cook an additional 2 minutes.
