8 oz pasta, penne or rotini
1 pint cherry tomatoes, sliced in half
8 oz mozzarella pearls
1 cup packed baby arugula
1/2 cup chopped fresh basil
1/2 cup olive oil
1/4 cup balsamic vinegar
1 Tbsp honey
1 clove garlic, minced
- Combine all ingredients for the vinaigrette in an jar or container and mix well. Set aside.
- Add pasta to a pot of boiling water and cook per package directions. Drain and let cool. Add pasta to a large bowl and add tomatoes, mozzarella, arugula and basil. Season with salt and pepper, if desired.
- Drizzle the pasta mixture with the vinaigrette and toss gently to combine.
