Banana Oat Greek Yogurt Muffins

Ingredients

  • 1 cup plain nonfat Greek yogurt
  • 2 ripe bananas
  • 2 eggs
  • 2 cups oats (quick or old fashioned)
  • ¼ cup brown sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ cup chocolate chips

Preparation

  1. In a food processor or blender, combine the first seven ingredients and process on high until batter is smooth and creamy.
  2. Stir in chocolate chips.
  3. Pour batter into a greased or lined muffin pan (making 12 muffins) and bake for 15 minutes at 350 degrees F.

 

Nutrition per muffin (12 servings): 130 calories, 5 g protein, 20 g carbohydrates, 120mg sodium, 3 g fat (1 g saturated), 2 g fiber.
