Apple Muffins

Apple Spice Muffin

1/4 cup chopped pecans
3/4 cup + 2 Tbs packed brown sugar
1/2 tsp ground cinnamon
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 tsp baking soda
1/2 tsp fine salt
1/4 cup canola oil
2 large eggs
1 cup natural applesauce
1 tsp vanilla extract
3/4 cup low-fat buttermilk
1 golden delicious apple-peeled, cored and cut into 1/2 inch pieces

Preheat over to 400 degrees F. Coat a standard muffin pan with cooking spray or liners. In a small bowl, mix together pecans, 2 tablespoons of brown sugar and cinnamon. In a medium bowl, whisk together all-purpose flour, whole wheat flour, baking soda and salt. In a large bowl, whisk the remaining 3/4 cup sugar and oil until combined. Add the eggs and whisk well. Add the applesauce and vanilla. Combine the flour mixture with the wet ingredients. Add the buttermilk until incorporated. Gently stir in the apple chunks. Pour the batter into the muffin pan and sprinkle with pecan mixture on top. Bake for 20-25 minutes until a toothpick comes out clean.
